Sparkling Wine The name Champagne refers only to this renowned region in France, outside of which the wines must be called Sparkling Wines. These effervescent wines contain bubbles of carbon dioxide gas. There are generally four methods to infuse with gas and the traditional method used in France is called Méthode Champenoise. Sparkling wines should be served quite cold -- the less expensive, the colder, and it is best to not chill them more than 2 hours before serving. They can be speed-chilled in a bucket of equal amounts of ice and cold water, which chills faster than ice alone. When opening, gently rotate the bottle, not the cork. Serving in a tall flute glass keeps the bubbles and bouquet longer.
